Cooking for one


I'm trying really hard to do more cooking for just me. It's hard since I'm not a big fan of leftovers. I cannot eat the same thing everyday. Which is what happens when I cook regular size recipes.

So I made up a recipe tonight that I am quite pleased with if I do say so myself.

And I'll share it with you.

Skillet Chicken with Tomatoes and White Beans

1 boneless, skinless chicken breast cutlet
1 cup of grape tomatoes, sliced in half
4 garlic cloves, peeled
1 cup of cannellini beans, rinsed and drained
2 tablespoons of olive oil
Italian herb seasoning
Salt and pepper

Preheat oven to 425.

Heat a cast iron skillet over medium-high heat. Add the olive oil and heat until it ripples. Once it's hot, add the chicken. Sear for three minutes on one side.

Flip the chicken and add the tomatoes and garlic to the skillet. Season with salt, pepper and Italian seasoning.

Place the skillet in the oven for 10 minutes. Remove and add the cannellini beans. Stir in with tomatoes and garlic.

Bake five more minutes.

Remove and serve.

Yum!
