Inside my test kitchen

As part of my new healthier outlook on life, I'm trying to change my eating habits. This is very difficult for a Southern girl who loves biscuits, gravy, Mexican food and red meat.

My biggest thing is trying to eat more fruits and veggies. I'm not the best at that and I know. I have found a very healthy fruit smoothie that I enjoy called Red Rhapsody. It's actually made of beets, raspberries, strawberries, tomatoes and other things that you can read on the label.

Next I'm experimenting with non-meat substitutions. No, not tofu. But I've found a meal starter crumble, as they call it, that looks like hamburger and tastes like hamburger but is 100% vegetable with soy protein. Very good for you and tasty.

So tonight I'm experimenting with spaghetti sauce. D. and Corrie and the boys are coming through to spend the night and for dinner, I'm serving my modified version of Italian meat sauce with cheese tortellini.

I'm not telling D. what's in it. But I think it's pretty tasty.
