That Portland is the macaroni and cheese capitol of the world. For the past three days, I have eaten lunch and dinner in this town. Each restaurant I have been in has had macaroni and cheese on the menu. Either a "homemade" version or a more upscale version with specialty cheeses and meats.
It seemed really odd to me, so tonight at Mother's Bistro & Bar I noticed again the specialty mac and cheese on the menu. So I asked the bartender what's up with all the comfort food. His explanation: Portland is a dreary and rainy city at times. Even worse during the winter and macaroni and cheese is seen as a bright spot in many a day.
I can't say that I disagree. But if I lived in Portland, I'd be big as a barn from eating it all the time. Because the mac and cheese at Mother's was some of the best I've ever tasted.
